Italian Rustic Cherry Pie ♥ (Gluten Free)

 I found a ton of cherries at the farmer's market, reminds me of my grandparents cherry trees growing up although they had the bright tart cherries, I got some bing cherries for my recipes. I hand pitted each one using a hack of a hard plastic soda straw and pushing it through to get the seed out. That was a task! ♥






Ingredients  ♥

For the crust 

1 ½ cups all-purpose gluten-free flour blend (I used Bob's Red Mill 1-to-1 gluten-free flour)

½ teaspoon salt (omit if using salted butter)

1 teaspoons xanthan gum (omit if you use a blend that has xanthan)

½ cup butter (1 stick), cold - cut into small pieces

4 tablespoons milk, cold

For the filling                                                             

5 cups fresh pitted cherries

¼ cup sugar

¼ cup all-purpose flour gluten free

1 tablespoons lemon juice 

For the edges                                                              

1 large egg, beaten

2 tablespoon of turbinado sugar or granulated sugar

Directions  ♥

For the crust 

Preheat oven to 425°F (220°C). In a medium mixing bowl, combine flour,salt, and xanthan gum.

With a pastry knife (or a knife and fork), cut butter into flour until butter is the size of small peas.

Add milk and combine. Add additional milk if needed. You may need to use your hands to work the milk into the dough.

Dough should be moist and easy to roll.

Roll dough out on a gluten-free floured surface with a rolling pin until approximately 10-inches in diameter. Alternatively, roll dough between two pieces of parchment paper.

Transfer to a parchment paper lined baking sheet that has an edge that's at least ½" high. Having a baking sheet with an edge will prevent the juices from running into your oven and burning.

For the filling ♥

In a large mixing bowl, combine cherries, sugar, flour and lemon juice; spoon over pastry to within 2 -3 inches of edge to leave room for folding.

Fold pie crust edge over the filling, leaving the center uncovered.

Brush the folded part of the pie crust with beaten egg then sprinkle the edges with turbinado sugar.

Bake 50-55 minutes or until crust is golden brown and filling is bubbly. enjoy! ♥

Russian Easter "Kulich" Dessert ♥

This is a traditional russian easter sweet bread. Here's my low fat version of my Grandma Katrina's recipe enjoy! ♥



Ingredients  ♥

1 pkg. active dry yeast
1/4 cup warm water 
1/4 cup low fat margarine, softened 
1/4 cup sugar 
1 teaspoon salt 
1/4 cup milk, scalded 
2 1/4 cups all purpose flour 
1 egg, slightly beaten 
1/2 teaspoon vanilla extract
1/4 teaspoon ground cardamom 
1/4 cup chopped candied red cherries 
1/4 cup chopped candied green cherries 
2 tablespoons chopped toasted almonds 
3/4 cup confectioners sugar 

4 teaspoons milk

Directions ♥
Soften yeast in the warm water.
Put butter, sugar, and salt into a bowl; add the scalded milk and stir until butter is melted.
Cool to lukewarm.
Beat 1/2 cup of the flour into milk mixture.
Stir in the yeast, then beat in egg, extract, and cardamom.
Add remaining flour gradually, beating thoroughly after each addition.
Cover; let rise in a warm place until doubled, 1 1/2 to 2 hours.
Punch down dough; let rise again until almost doubled, 30 to 45 minutes.
Turn dough onto a lightly floured surface.
Distribute cherries and almonds evenly over dough; knead about 15 times.
Shape dough into a ball and put into a well-greased 1-pound coffee can.
Cover; let rise again until doubled, 30 to 40 minutes.
Place can on a baking sheet, if desired.
Bake at 350°F 45 minutes, or until bread is well browned.
Cool in can 10 to 15 minutes, then turn out onto a wire rack to cool completely.
Blend the confectioners' sugar and milk until smooth.
Spoon icing over Kulich and allow it to drip down sides. I like to add little multi-colored sprinkles to the tops. enjoy! ♥

Gluten Free Pumpkin Bread ♥






Here is a healthy gluten free version of pumpkin bread for the fall season!




DRY INGREDIENTS

▢1 ⅓ cups gluten-free measure-for-measure flour

▢1 1/4 cups  granulated sugar

▢1 teaspoon baking soda

▢1/4 teaspoon baking powder

▢1 teaspoon salt

▢2 teaspoons ground cinnamon

▢1/2 teaspoon ground nutmeg

▢1/2 teaspoon ground ginger

▢1/4 teaspoon ground cloves

▢1/4 teaspoon allspice

                                                  WET INGREDIENTS

▢1 cup  pumpkin puree

▢2 large eggs

▢1/3 cup  milk I use almond milk

▢1/3 cup  neutral oil of choice I use extra virgin olive oil

▢1 teaspoon vanilla

▢1 teaspoon lemon juice


Instructions 


Preheat the oven to 350F. Lightly grease a 9×5 loaf pan with cooking spray.

In a large bowl, mix together the dry ingredients.

In a separate bowl, whisk together the wet ingredients.  I combined the wet ingredients into the dry which were in my Kitchen aid mixer, this makes a more thoroughly mixed batter.

Add the wet ingredients to the dry ingredients and mix together with a rubber spatula until fully incorporated.

Smooth batter into the prepared pan.

Bake for 40 minutes, then cover the pan loosely with tin foil. This will allow the loaf to continue cooking without the topping becoming overly brown. Bake for another 20 minutes, until a toothpick inserted into the center of the loaf comes out clean.

Let the bread cool for 10 minutes in the pan before turning out onto a wire rack to cool completely. Let cool for at least 30 minutes before slicing. Enjoy! ♥

Healthy Gluten Free Strawberry Pretzel Salad ♥

 It's summer and I am nostalgic going through my mother's summer recipes I stumbled upon this classic Strawberry Pretzel Salad. My version is healthier and gluten free! ♥




Ingredients  ♥


  • 6 oz. strawberry  sugar free Jell-O

  • 2 cups boiling water

  • 2 1/2 cups salted pretzels Gluten Free, (measured before crushing)

  • 1/4 cup granulated sugar ( Sugar in the Raw organic white)

  • 8 Tbsp. unsalted margarine

  • 8 oz. package light cream cheese, softened

  • 1/2 cup granulated sugar ( Sugar in the Raw organic white)

  • 8 oz. cool whip, thawed in the fridge

  • 1 lb. fresh strawberries, hulled and sliced


Directions


  1. Preheat the oven to 350°F. Combine strawberry Jell-O with 2 cups boiling water and stir until completely dissolved. Set aside to cool to room temperature.

  2. Crush 2 1/2 cups pretzels in a sturdy Ziploc bag, using a rolling pin.

  3. In a medium saucepan, melt 8 Tbsp. margarine then add 1/4 cup sugar and stir. Mix in crushed pretzels. Transfer to a 13x9 glass casserole dish, pressing the pretzel mix evenly over the bottom of the dish and bake for 10 min at 350°F, then cool to room temp.

  4. When pretzels have cooled, use an electric hand mixer to beat 8 oz. cream cheese and 1/2 cup sugar on medium/high speed until fluffy and white. Fold in 8 oz. Cool Whip until no streaks of cream cheese remain. Spread mixture over cooled pretzels, spreading to the edges of the dish to create a tight seal. Refrigerate 30 min.

  5. Hull and slice 1 lb. strawberries then stir into your room temperature Jell-O. Pour and spread strawberry Jell-O mixture evenly over your cooled cream cheese layer and refrigerate until Jell-O is set (2-4 hours).

Russian Easter Recipes ♥

Today is the Russian Orthodox Easter, here is a collaboration of traditional Russian Easter dishes that I ate growing up,  Easter or Paskha is the most important religious observance of the year in the Russian Orthodox Church. Easter in Russia is a lot more than just a celebration of the resurrection of Jesus Christ. 



      In Russia Easter is usually celebrated later than in the West. This happens because Easter dates are determined by different calendars. When the Catholic and Orthodox churches separated in the 11th century, they both calculated the date of Easter in the same way. However, the Catholic church adopted the Gregorian calendar in the 16th century, and the Orthodox church continued to use the old Julian calendar. Because the two calendars had a difference of 13 days by the 21st century, and because both churches use March 21 for the date of the vernal equinox instead of the observed equinox, the date of Easter is different in both churches. Preceding Easter is a 40-day long Lenten fast during which no meat and dairy products, fish, eggs, or alcohol are allowed.  The fasting begins with Maslenitsa or Pancake week which is celebrated during the last week before the Great Lent. Though meat is already forbidden, Maslenitsa represents the last chance to partake of dairy products (russian pancakes, blini) and those social activities that are not appropriate during the more prayerful and introspective Lenten season. Holy Week, beginning with Palm Sunday is a busy time in Russian families, when houses are cleaned and Easter food is prepared. On Holy Thursday, Russians paint Easter eggs using their traditional method of boiling them in onion peels or other natural dyes. Painted eggs are a universal symbol of Easter, but in Russia they take on even greater significance.

On Holy Saturday, a strict day of fasting in which no food at all is allowed, families are nonetheless busy preparing for the Easter feast. The feast served to break the fast after the midnight mass, includes the Paskha cake and Easter eggs which are blessed by the priest on Holy Saturday. Sunrise services in Russia are not common on Easter morning, instead, Orthodox churches hold a midnight mass, with a procession around the church.  When the clock strikes 12, church bells announce the resurrection of Christ.
