Here is a recipe my mother used to make for parties as an appetizer or a healthy light dinner.. seven layer salad..it's a perfect spring salad! This is a repost recipe but I just had to post it again, since it's almost spring and this is a great salad to bring along to those parties, barbecue's, showers, etc. enjoy! ♥
Ingredients ♥
1 pound turkey bacon
7 hard cooked eggs, (use egg whites only if desired)
1 head lettuce, chopped
2 cups chopped tomatoes
1 red onion, chopped
1 10 oz. bag frozen peas, thawed
1 10 oz shredded fat free cheddar cheese
2 cups light mayonnaise
2 1/2 tablespoons white sugar
1 cup grated Parmesan cheese
Directions ♥
1. Cook turkey bacon until crispy. Crumble and let drain on paper towel.
2. In a large glass bowl, place the chopped lettuce in the bottom. Add egg whites, onions, tomatoes, peas, shredded cheese, and turkey bacon.
3. Prepare dressing by whisking together mayonnaise, sugar, and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

Now you could layer it neatly like a traditional seven layer, but I decided why not try a little something different?
