skinny no fried green tomatoes ♥

A simple southern dish fried green tomatoes is delicious, but why not make it healthy and bake the green tomatoes, they are delicious and perfect for a summer treat! enjoy!  ♥



Ingredients ♥

One large green tomato (or two smaller ones), sliced
1 1/2 teaspoons NRG egg replacement powder + 2 tablespoons warm water (or another egg substitute equivalent to one egg)
1/4 cup nondairy milk, plain
1/4 cup unseasoned breadcrumbs
1/4 cup vegan parmesan (recipe)
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Cooking spray


Directions  ♥

1. Preheat the oven to 400F. Grease a baking sheet with cooking spray.
2. Cut the tomato into slices 1/4 to 1/2″ in thickness. Sprinkle with salt and set aside.
3. In a small bowl, combine the egg replacement and nondairy milk; whisk briskly to mix. In another bowl, combine the breadcrumbs, parmesan, and spices. Mix well and add any extra seasonings to taste.
4. One by one, dip the tomato slices in the milk/egg and then dredge through the breadcrumbs/parmesan, giving them a quick, gentle shake in between the wet and dry mixes. Place them on the baking sheets, with a little space in between each slice.
5. Bake at 400F for about 20 minutes, or until the breadcrumbs are golden brown. Flip the slices about halfway through so that they bake evenly on each side. Serve warm.enjoy!  ♥
