spooky eyeball caprese ♥

here's a twist on the caprese for halloween!

You will need: fresh mozzarella balls, tomatoes, salt, pepper, olive oil, fresh leaves of basil, straws (bear with me), Castelvetrano olives (you can use any large olive, but the green color of these work better, it's worth looking for them!), and black olives (whole).

The most time consuming portion is making the "eyes". You need to cut off a shallow round portion of the Castelvetrano olive with a small knife. Then, using the bottom of the straw, cut out a hole in the center of the olive slice. Using the same straw, punch out a hole from the black olive. Using the little round part of the black olive you punched out, place it into the hole of the Castelvetrano olive. There you have it, the pupil and iris of the eyeball!

Place these on the white mozzarella balls, and then assemble the rest of the caprese - my tomato slices were way bigger so i placed the basil pieces on top, but you can also do the tomato on top of the basil leaves, whichever size fits better.

drizzle with extra virgin olive oil and salt and pepper and enjoy!
