vegetarian pumpkin" hamburger" ♥


this is a great idea for a halloween party and its healthy too the "hamburger" is made up of black beans! :)
1. Find an oblong pumpkin, which will replicate the huge hamburger bun. Place the pumpkin on its side and cut away the stem. Cut a wedge out of the front side of the pumpkin (see photo) so it looks like an open hamburger bun. Remove pulp and seeds from inside.
2. Dry some pumpkin seeds and glue them on the top of the pumpkin to look like sesame seeds.
3. Add romaine lettuce to the bottom portion of the pumpkin and overflowing down the front side. Pile burgers, cheese slices, pickles, tomatoes, and onions on the lettuce to create a family style platter of burgers  "hamburger "recipe to follow) in a fab pumpkin bun!

Ingredients:1 can black beans, drained and rinsed
1/2 cup canned pumpkin puree (NOT pumpkin pie mix!)
2 teaspoon hot sauce (of your choice)
1/4 cup flour (plus extra for flouring hands, etc.)
1/2 tsp garlic powder
1/4 tsp chili powder
Salt and pepper to taste
Start by mashing the black beans until there are no whole beans left. Mix in the pumpkin puree, hot sauce, flour, garlic and chili powder. Add in salt and/or pepper to taste. Divide the mixture into four even patties (the extra flour will come in handy at this point as they will be very sticky). Heat a large skillet over medium-high heat spray with fat free nonstick cooking spray(enough to cover the bottom of the pan). Cook patties on each side for about 2 – 3 minutes, until brown and crispy. Drain on paper towels before serving. assemble the "hamburger" pumkin and have a great halloween party! :)
