I love to use my favorite product of fresh mozarella Bel Gioioso http://www.belgioioso.com/index.htm which is from my home state of Wisconsin, I love their products!
Cut vertically into the tomatoes, making sure not to cut down through the bottom edge. Leave about a 1/2-inch of tomato flesh from the bottom of the tomato to the edge of the cut.
Slice the mozzarella into 1/2-inch slices and wedge each between the tomatoes’ crevices
Squeeze a basil leaf next to each mozzarella slice. Whisk together the olive oil and balsamic vinegar and drizzle atop each tomato. Season with salt and pepper and serve! enjoy! ♥

- Handful of fresh basil
- Dash of salt and pepper
