insalata caprese ♥

 With Festa Italiana starting Friday It's Italian foodie ideas....Here is a delicious light italian caprese salad recipe! Perfect for a light healthy lunch or light dinner!  It's a different way to serve it and I love it!   ♥ 

   I love to use my favorite product of fresh mozarella Bel Gioioso  http://www.belgioioso.com/index.htm which is from my home state of Wisconsin, I love their products!





Ingredients ♥    (3-4 tomatoes)

  • 3 tomatoes
  • 4 oz soft mozzarella ball
  • 1 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Handful of fresh basil
  • Dash of salt and pepper




 Instructions  ♥ 

Cut vertically into the tomatoes, making sure not to cut down through the bottom edge. Leave about a 1/2-inch of tomato flesh from the bottom of the tomato to the edge of the cut.

 Slice the mozzarella into 1/2-inch slices and wedge each between the tomatoes’ crevices



 Squeeze a basil leaf next to each mozzarella slice. Whisk together the olive oil and balsamic vinegar and drizzle atop each tomato. Season with salt and pepper and serve! enjoy!  ♥
