southern style "skinny" chicken and waffles ♥

Okay I know to some of you this combination may sound weird, but after you taste it you'll love it! I first came upon this dish to my favorite place to go in Tennessee Loveless Cafe http://www.lovelesscafe.com/ in Nashville, I love it they have the best southern food! and of course the best  Chicken and Waffles!  Here is my healthy version, baked not fried and low sugar.. still yummy!


 
10 chicken tenders,  see my recipe below..cut into 3 equal pieces (or a couple boneless chicken breasts, 2-3 depending on size)

Baked southern style chicken nuggets
Makes about 2 dozen nuggets
1 1/2 pounds skinless, boneless chicken breasts or tenders
1 cup bread crumbs
1/3 cup grated Parmesan cheese
1/2 teaspoon kosher salt
1 teaspoon dried thyme or mixed herbs
Pinch of cayenne (optional)
Freshly ground black pepper
1 egg
1/4 cup skim milk, yogurt, or buttermilk
Cooking spray

Preheat the oven to 400 degrees. Place a cooling rack in the center of a cookie sheet. Set aside.
Cut the chicken breasts into 1 1/2 inch pieces. In a shallow bowl or a large plastic bag, mix together the bread crumbs, cheese, salt, dried herbs, cayenne (if using), and a few grinds of black pepper. Combine the egg and milk in a small bowl. Dip the chicken into the milk mixture and then coat it well with the bread crumbs mixture, either in a bowl or by tossing it inside the bag. Place the coated chicken pieces on the cooling rack and put the cookie sheet into the oven. Depending on your oven and the size and thickness of the chicken, the pieces will take 15 to 20 minutes until firm and cooked through. Spritz the chicken lightly with cooking spray and then place the cookie sheet under the broiler for 1 to 2 minutes, until browned, if desired.

now for the waffles....mini waffle recipe
 
30 mini waffles, see my recipe below or regular waffles cut into 30, 1-inch pieces 
  • 2 cups Original Bisquick® mix
  • 1 1/3 cups milk
  • 1 egg
  • 2 tablespoons low fat organic vegetable oil
  1. 1 Heat waffle iron; grease with vegetable oil
  2. 2 Stir ingredients until blended. Pour onto center of hot waffle iron. Close lid of waffle iron.
  3. 3 Bake about 5 minutes or until steaming stops. Carefully remove waffle.
 
Honey Butter:
4 Tablespoons  fat free softened butter
2 1/2 Tablespoons sugar free  honey
Whisk until combined.
Spicy Honey:
3 Tablespoons sugar free honey
several dashes Tabasco sauce
Whisk until combined, add as little or as much Tabasco as you like.
Spread honey butter onto waffles, if using, and place 1 chicken piece on each waffle. Drizzle with spicy or plain honey or sugar free maple syrup  and serve warm.  yummy! ♥
