"skinny" spring rolls ♥

Here is a supercute lunch or dinner and so healthy and delicious! It's a recipe with a twist with all fresh ingredients that shout spring!..avocado, carrots and mango yummy! ♥ 


Ingredients ♥

  • Six rice paper wraps
  • 2 small avocados
  • 2 carrots
  • 2 english cucumbers
  • 6 big pieces of lettuce
  • 1/2 bag of premade coleslaw
  • 1 big red mango
  • 1/2-3/4 cup peanuts

Preperation ♥

  • Prep by cutting mango & vegetables into long, thin strips.
  • Make wraps one at a time: soak one rice paper wrap in warm water until soft {about 30 seconds}
  • Lay wrap on flat surface.
  • Place a layer of mango, lettuce, then coleslaw, veggies & peanuts on left side of rice paper wrap.
  • Fold bottom of rice paper wrap up to keep ingredients “tucked in”
  • Roll wrap snugly and place on a plate. Repeat with five remaining wraps. enjoy!
