Ingredients ♥
2 large carrots chopped
1 medium onion, chopped
2 ribs celery, chopped
1 clove garlic, chopped
1 medium zucchini, diced
2 cups leftover green beans (cooked)
3 tablespoons tomato paste
2 cups cooked turkey, chunks
1 can cannellini beans, drained and rinsed
1 bay leaf
6 cups turkey or chicken stock
1 can diced tomatoes
1 cup uncooked conchiglie pasta shells
2 tablespoons grated fresh Parmesan cheese and more for serving
Directions ♥
On the stovetop add some olive oil, onion, celery,carrots, garlic, and zucchini. Cook for about 5 minutes.Add tomato paste and can of diced tomatoes and mix well.Add turkey, beans, bay leaf, and stock. Bring to boil.Add pasta and cook 9-10 minutes until al dente.Stir in cheese. Season with salt and pepper.sprinkle with fresh parmesan enjoy! ♥
