Here is an easy greek chicken souvlaki recipe (this is perfect for summer grilling and so healthy and easy to make!) it's one of my favorites! enjoy! ♥

For the chicken: ( I like to marinade this overnight for a savory taste) add all the ingredients together and marinate in a ziploc bag

- 3 – 5.3 oz. cups of Oikos plain, non-fat Greek yogurt(I used 0% plain Oikos)
- 1 cucumber, peeled, seeds removed and grated
- 1 1/4 teaspoons salt
- 2 cloves garlic, minced
- 1/4 tsp. ground pepper
- 1/2 teaspoon fresh dill
- juice of one lemon
- 4 boneless, skinless chicken breasts (3-4 oz. each), cubed
- 1/8 cup white vinegar + 1/8 cup water
- 2 tablespoons fresh-squeezed lemon juice
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 2 teaspoons dried oregano
- Salt and pepper
- Cavenders greek seasoning ( about 4 teaspoons )

- Add grated cucumber to a bowl with salt. Let sit for 10-20 minutes.
- Wring out cucumber with a kitchen towel to remove excess liquid then combine with yogurt, garlic, pepper and dill.
- Mix well and set aside.
- Spray grill with cooking spray and heat on HIGH.
- Combine ingredients 2 through 6 in a bowl then add cubed chicken, mixing well so all the chicken is coated. Let sit for 5 minutes.
- Thread chicken onto 4 metal skewers.
- Lay skewers on the hot grill turning frequently and cooking until chicken is nicely browned on both sides.
- Remove from heat and lay over a warm pita (try whole wheat for a healthier version if you like) Top with cucumber slices, red onion, olives, feta cheese, and tzatziki sauce. enjoy! ♥
