baked summer salmon ♥

Here is an easy, healthy fish friday recipe, baked salmon in parchment paper with wine.. what could be better? enjoy! ♥


Ingredients ♥ 
1-2 pieces of salmon per package
Handful of cherry tomatoes
Handful of kale
Lemon juice
Salt + pepper
Sprig of herb (rosemary + thyme work well)
White wine (optional)
Parchment paper




Directions  ♥

1. Preheat oven to 450 degrees. 2. Fold a large piece of parchment paper in half and cut it out in the shape of a heart (make one heart for every packet you plan to make).
3. Season your fish with salt + pepper. Place a bed of kale in the middle of the parchment heart, add 1-2 pieces of seasoned fish and put some cherry tomatoes around it and squeeze fresh lemon juice on top of everything.  4. Top it off with a sprig of herb. 
5. Fold the parchment in half over the fish and starting at the bottom end of the heart, start folding the edge of the parchment down and keep folding so that all the ingredients are enclosed and secure inside the packet. 
6. Open a small hole at the top of the heart and pour 1-2 tbsp of white wine into the packet.  


Sit the packets down on a pan with the fish on the bottom side and the folded ends up. 


7. Bake at 450 degrees for 20 minutes.
8. Open package carefully as steam will be hot. Beautiful packets of salmon and goodies await you. enjoy!
