Here is a great Cinco De Mayo recipe for low sugar tequilla cupcakes! ♥
3 cups all-purpose gluten-free flour
2 cups stevia
1 tablespoon baking powder
1/2 teaspoon sea salt
1 cup applesauce
4 eggs
1 cup fat-free greek yogurt
1/2 teaspoon vanilla extract
3 limes juiced
1 box of Wilton buttercream icing mix
6 tablespoons smart balance butter
3 tablespoons non-alcoholic margarita mix
2 tbsp Patron tequila
Preheat oven to 325.
Mix baking powder, sea salt, applesauce, eggs, yogurt, vanilla extract, and lime juice all together.
Whisk until smooth.
Line cupcake pan with cupcake liners.
Pour cupcake mix into liners, filling 3/4 of each liner.
Bake for 20 minutes.
Combine buttercream icing mix, butter, and margarita mix in a separate bowl.
Whisk until creamy.
Frost cupcakes after they have cooled.
