So I have a bunch of pineapple leftover.. why not have a cocktail with it , this will go great with tonight's shrimp kabobs.. and jalepeno adds a little kick! enjoy! ♥
I take a bottle of clear tequila and pour it over a few cups of freshly cut pineapple. Then I seal the container and steep the tequila for 1 to 3 days. *You can also put your freshly cut jalapeño in there as well. I did that before and left it a little to long and ended up with super spicy margi's. So now I just add them at the end for a little extra kick! After about 48 hours your tequila will taste much more smooth and pineapple like! Strain the tequila into a clean container and discard the pineapple.
To make a lower calorie margarita I put a a couple ounces of the pineapple infused tequila, freshly squeezed lime juice, agave nectar and a couple pieces of jalapeño in a shaker with some ice. Its super simple just shake it up and serve!! (Its all to taste so just adjust your agave and lime juice to make it less or more sweet).

* To get the salted rim just take a lime wedge and run it around the rim the glass then place the glass upside down in a small plate of sea salt. enjoy! ♥
