Here is a great recipe for greek pizza, if you have leftovers from a salad, super healthy! ♥
1 Tbsp extra-virgin olive oil
4 (6-inch) whole wheat pita breads (100 calories each)
1 Tbsp red wine vinegar
salt and pepper, to taste
1 tsp fresh oregano, chopped
1/2 small red onion, halved and sliced thin
12 pitted kalamata olives, halved
1/2 cup grape tomatoes, halved
1/2 cup hummus
1/2 part-skim mozzarella cheese, shredded
4 Tbsp (1 oz) crumbled feta cheese
Tzatziki ♥
1/2 cup nonfat plain Greek yogurt
3 Tbsp English cucumber, finely diced
1 clove garlic, finely minced
1 tsp white wine vinegar
1 tsp lemon juice
salt and pepper, to taste
Directions:
Combine all the ingredients for the tzatziki. Refrigerate until ready to use.
Preheat the oven to 475 F. Spray both sides of pitas with olive oil. Arrange them in a single layer on a baking sheet and bake 5 minutes
Meanwhile, combine the olive oil, vinegar, and oregano in a medium bowl. Season with salt and pepper and whisk to combine. Toss with the olives, onions, and tomatoes.
Spread 2 tablespoons of the hummus over each pita, leaving a small border. Sprinkle 2 tablespoons of mozzarella on each pita, Divide the vegetable mixture evenly over the cheese, then sprinkle with the feta.
Cook until the vegetables are softened and the cheese has melted, 6 to 8 minutes. Drizzle with tzatziki sauce and serve. enjoy! ♥
