This is a great spring dinner salad and so good for you ! :)
just couldn't resist the beautiful asparagus at whole foods today! ♥
1 1/4 cups dried white beans (I used Great Northern), soaked overnight!
2 red bell peppers, seeded and sliced
1 1/2 lb. asparagus, washed, bottoms trimmed, and cut into 1 inch pieces
-DRESSING-
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup minced fresh parsley
2 T. minced shallot
1/4 t. kosher salt
1/8 t. pepper
-Just cover the beans with salted water in a medium pot. Bring to a boil, and simmer about 45 minutes.
While the beans are cooking, combine the red bell pepper and the asparagus in a medium pan, cover with water, bring to a boil, and cook for about 3 minutes. Drain and rinse with cold water.
To make the dressing, whisk together all dressing ingredients in a small bowl. Taste and adjust seasoning if desired.
When the beans are done (tender but not mushy), drain and cool.
In a serving bowl, combine the beans, asparagus and pepper.
Pour 2/3 of the dressing over the mixture and toss gently. Add more dressing if you want. enjoy!
