my mother used to make this bread when i was growing up, since there wasn't alot of sweet things growing up, this was the alternative and i loved it :)

1cooking spray 1 1/2 cup white all purpose flour 1/3 cup unsweetened cocoa powder 1 tsp baking soda 1 tsp ground cinnamon 1/4 tsp low sodium baking powder 1 cup sugar 2medium eggs 1/3 cup canola oil 1 tsp vanilla extract 2 cup chopped zucchini | |
1 Preheat oven to 350ºF, and coat a 9x5x3-inch loaf pan with nonstick cooking spray. 2 In a large bowl, combine flour, cocoa, baking soda, cinnamon, and baking powder; set aside. 3 In a separate large bowl, combine the sugar, eggs, oil, and vanilla until well blended. 4 Stir in shredded zucchini, add the dry ingredients, and stir until just moistened. 5 Pour into the prepared pan, and bake 45 to 55 minutes, or until toothpick inserted in the center comes out clean. Let cool in pan. |
