refreshing summer dish! pair it with my "skinny" girl margarita and your all set for the healthy version of friday fish! :)
4-6 medium tomatoes, finely diced
1-2 onion, finely diced
1/2 to 3/4 cup italian flat leaf parsley

1/2-1 full can tomato juice
1 lb fresh shrimp
1 tablespoon fresh garlic minced
1 tablespoon Worcestershire sauce

chop all tomatoes, onions, and italian flat leaf parsley, and put in salad bowl. Squeeze limes into the juice. Pour in tomato juice. Start boiling the shrimp and add garlic or Worcestershire sauce Then, add shrimp.
Finally, add salt, pepper, and other spices such as garlic , lemon pepper, etc. if desired. Mix and and chill in fridge for about 45 minutes then serve garnish with torilla chips, lime or lemon wedges, avocado and enjoy!
note: for a easier version you can add cooked shrimp and marinate all the ingredients overnight, but boiling the shrimp with the ingredients infuses the flavor !
