Here is a fun recipe for skinny pink ribbon cookies!

Ingredients  ♥

1/4 cup    Butter, softened (I use smart balance) 

1/4 cup + 2 tbs  Baking stevia 

1  egg

1/2 tsp    Vanilla extract

1/2 tsp    Almond extract 

1 cup    whole wheat pastry flour

1/4 tsp    Baking powder

1/8 tsp    Salt

Directions ♥

In a medium bowl, cream together butter, and sugar substitute with a mixer until fluffy. Add egg, and extracts and beat until combined. In a small bowl, combine flour, salt, and baking powder. Gradually add dry ingredients to wet, until just combined. (Don’t over work dough or it will get tough). Wrap dough and place it back in the fridge to chill for about 30 minutes, or until dough is cold.

When ready to cut cookies out, preheat the oven to 375 degrees. Line a cookie sheet with parchment paper, (or foil and spray with cooking spray). Roll the dough out on a lightly floured surface and cut out shapes with ribbon cookie cutters. Place on baking sheet and bake for 8 minutes. Frost the cookies with a light sugar free glaze of water and powdered sugar, use sprinkles to decorate!  and enjoy! ♥

Here is my recipe for Skinny Stuffed Sliders

Ingredients ♥

 1 pound 90 % lean ground beef
 1/2 teaspoon garlic powder
 1 teaspoon Worcestershire sauce sea salt & ground pepper 
 4 ounces cheddar cheese, cubed
 4 slices  turkey bacon, cooked, and crumbled
 2 small vine ripened tomatoes sliced
 8 mini hamburger buns or dinner rolls  


Directions ♥
In a medium bowl mix together beef, garlic powder and Worcestershire sauce. Add salt and pepper to taste and form 8 meatballs. Push one cube of cheese into each meatball, add turkey bacon crumbles  and pinch up meat on sides  Flatten meat into a patty. Patty should be slightly larger than the diameter of your mini hamburger bun to allow for shrinkage on the grill. Grill burgers over medium heat for 4 to 5 minutes on each side.  Toast the buns on the grill. Assemble burgers on buns and add one slice of tomato to each burger. Let burgers rest for a few minutes before serving. Makes 8 mini burgers.

2 cans bean dip
2 cartons fresh guacamole

1 cup diced tomatoes or pico de gallo, drained
4 portable containers Pearls to go sliced black olives

Directions  ♥

In a bowl add taco seasoning package and beans. Stir until well blended. Then add a layer of beans in bottom of cup.Add a layer of guacamole.Next add a layer of sour cream.Next add some salsa!Next is a layer of shredded cheese!
Pack into a mini portable cups,  add your pearls sliced olives to go on top of the dip when ready for eating and your all set, so easy! ♥

Here is my healthy recipe for waldorf chicken salad lettuce wraps  using almonds! 

  Waldorf Chicken Salad Lettuce Wraps 

Ingredients ♥

8 oz chicken breast, pre cooked  
½ cup apple, peeled and cut into small cubes
½ cup red seedless grapes, cut in half
⅓ cup celery, chopped
2 tbsp plain fat-free Greek yogurt
2 tbsp light mayonnaise
1 tsp dijon mustard
¼ cup chopped  Nuts.com almonds
salt and pepper

Directions ♥
Dice or pull apart cooked chicken breast, set aside.
Combine mayo, yogurt, mustard, salt, pepper and mix well.
Add chicken, grapes, apples, celery, and let it chill in the refrigerator until you are ready to eat it.
Top with almonds before serving.

Serve over a bed of lettuce! enjoy! ♥

Homemade Kale Chips ♥

Ingredients  ♥
1 bunch of kale
1-2 tablespoons extra virgin olive oil
Salt
Pepper

Directions  ♥
Preheat the oven to 300 degrees F. Wash the kale thoroughly to remove any grit and pat with towels to remove the excess water. Rip the leaves of the kale away from the stems and discard the stems.
Lay the leaves out on a baking sheet and drizzle with olive oil, then sprinkle with salt and pepper. (I would start out light on the salt and pepper, you can always add more later)

Bake the kale for about 20 minutes, or until crisp. Allow to cool and then transfer to a bowl. enjoy! ♥
