easy mediterranean pumpkin and feta pizza ♥


  pizza dough for one 12 inch pizza

  • 3 tbsp tomato pizza sauce


  • pine nuts (optional)


  • 1 cup roasted pumpkin cubes


  • 1/2 red onion, quartered and sliced thinly (optional)


  • 1 cup crumbled reduced - fat  free feta cheese


  • 1/2 cup quartered cherry tomatoes


  • Fresh basil leaves, chopped


  • 1 handful of  arugula


  •  1-2 tbs extra virgin olive oil


  • salt and pepper to taste



    1. Preheat oven to 450f
    2. Place pizza base onto baking tray lined with baking paper. Spread tomato pizza sauce on pizza. Top pizza with pumpkin, tomatoes, red onion, feta cheese and basil.
    3. Bake for 10 - 15 minutes or until cheese starts to brown.
    4. Remove pizza from oven and sprinkle with arugula leaves,drizzle with olive oil, slice and serve. enjoy! (it's a different twist on pizza but oh so yummy! )

    1. You know before my family immigrated to New Zealnd I always thought pumpkin is only food for pigs.After I tried the first time roasted pumpkin never looked back.Great idea to combine it on pizza with feta:)
