Here is a healthy version of italian pasta salad, with summers freshest ingredients from the farmers market! Perfect for your sunday dinner, or sunday picnic! ♥
Ingredients ♥
1 package of your favorite gluten free spiral noodles
Cherry tomatoes- halved
Italian olives- pitted
green beans- cleaned and halved then blanched
arugula- cleaned and chopped into large pieces
fresh thyme- leaves slid off of stems
pesto 2 tbsp extra virgin olive oil
fresh squeezed lemon and salt and pepper to taste
Cook noodles to all dente, meanwhile chop up the tomatoes and green beans, let pasta cool, add olive oil, pesto arugula, thyme, olives, veggies, mix add salt and pepper, and squeeze with fresh lemon! serve chilled enjoy!
