summer campfire dinner ♥

 Today's friday fish dinner is a campfire style dinner! summer is here..fishing, camping, the beautiful weather, these are a few of my favorite things, so for tonight's fish friday I have a summer campfire menu, of course a healthy version... enjoy! ♥

for starters an appetizer...heres my skinny version of campfire dip, you cook it in the foil, its super good without all the fat and calories! 



Ingredients ♥

2 sheets of tin foil wrappers

1 250 g container of  Philadelphia Herb & Garlic light Cream Cheese

3/4 cup salsa

diced tomato

sliced green onion

Directions:
Place cream cheese on double layer of tin foil {or 2 tin foil wrappers} basically just plop it down from the container upside down...
 To cream cheese, add 1 cup of salsa and diced tomatoes and sliced green onions on top.. 


Wrap up in foil.

Here is how I suggest wrapping bbq dishes into a foil packet.

Wrap up the middle first...folding foil over 3 times as shown.

Then roll ends tightly.. folding over 3 times as shown.

Wrapping the ends tightly is important because it stops the contents of the packet from leaking out onto the bbq.
           Place foil packet on a hot bbq for 10-15 minutes Then open up the top to have a peek.

If it's warm & melty...you are done!

       {Or you could leave on for a few more minutes if necessary.}

Open up the middle fold of the packet completely to form a bowl for serving.

  {Leave the ends of packet alone.}
serve with veggies or low fat tortilla chips  enjoy! ♥

 then to the main course...beautiful rainbow trout! 




  • Rinse off your trout (or whatever the catch of the day is) and if you caught them yourself, gut them and clean them. Sprinkle the cavity generously with Bow River Fish Blendhttp://www.silkroadspices.ca/products/bow-river-fish-blend and fold it shut with some slices of lemon inside.
  • In a heavy skillet, heat some olive oil and fat free butter, until the butter begins to brown. The pan should be close to smoking – this is how you get the fish skin to be nice and crispy.
  • Season the fish on both sides with salt and pepper and toss them into the pan. Don’t move them around – just leave them on each side for around 4 minutes until the flesh becomes flaky and the skin crispy.
  • Put them on a plate or board and remove the bones the best you can. It’s easiest to start with the head and let the tailbone naturally come off at the end. Squeeze some fresh lemon over the fish and top with a final sprinkle of Bow River Fish Blend.
and for dessert..banana boat s'mores here is my "skinny" version.. these take me back to girl scout camp when I was younger, love them! 

Ingredients ♥

- 1 unpeeled banana
- chocolate chips sugar free Nevada Manna brand http://nevadamanna.com/
- mini marshmallows ( I like to use a sugar free brand )
- heavy duty foil


 Lay the banana on its “back” and peel just the top open. Cut out slices of banana every half inch or so, leaving every other piece in the peel. Stuff chocolate chips and mini marshmallows between the pieces.


 Close the banana, tightly wrap in heavy duty foil, then throw on the campfire for ~10 minutes. Open and enjoy! (Note – they are very hot when they first come off the fire…so be careful!)


and of course nothing ends a great summer campfire dinner like a cocktail! here's my camping version of a s'more martini...




Ingredients ♥
 
- Smirnoff Fluffed Marshmallow Vodka
- milk
- Bailey’s Irish Cream
- Nutella
- graham cracker crumbs
- mini marshmallows
- toothpicks


First thing to do is rim your glasses. Put a couple graham crackers in a Ziploc and crush them using your hands, a large spoon, rolling pin, or hammer. Set them on a plate.
Now scoop out a bit of Nutella onto a plate. Dip the rim on your glass in Nutella and then the graham cracker crumbs.
 Now, for the drink. These are on the insanely sweet side so are great as substitute for dessert. Could also work well with hot chocolate instead of milk. Pour 2 oz of vodka, 2 oz of milk and 1 oz of Bailey’s over ice. Add in a few chocolate chips for good measure. Shake, and pour!
 For a garnish, I roasted a few mini marshmallows on a toothpick with a lighter or pack of matches. ( I don't recommend roasting the minis over a regular fire, or you will burn your little fingers off! )
 It’ll feel just like the campfire! ♥
