all american fourth of july menu..but healthier! ♥

Here is a Fourth of July menu everyone.. only this one is way healthier, without losing all the taste! Hope you like it, and have a safe and Happy Fourth of July! ♥

Start off with some appetizers..here's my recipe for patriotic strawberries..♥



Simply dip in white icing (I got mine from Micheals crafty stores, they are in the baking candy section, melt the discs according to package directions)..dip in white icing... then dip in blue sanding sugar. ♥

now for the salads, here's a traditional potato salad..only healthier...♥

Ingredients

12 Small or 6 Medium Red Potatoes
1 Small Onion, finely chopped
1 cup Chopped Celery
6 Hard Boiled Eggs, diced
1 tsp Salt
Dressing:
2 Eggs, beaten
1/2 cup White Sugar
1 tsp Cornstarch
Salt, to taste
1/2 cup Vinegar
1 can (5 ounce)  Evaporated Milk
1 tsp Prepared Yellow Mustard
1/4 cupfat free butter or margarine
1 cup light  Mayonnaise

Directions  ♥
Place peeled potatoes into a large pot and fill with enough water to cover. Bring to a boil and cook for about 20 minutes, or until easily pierced with a fork. Drain, cool and dice. In a large bowl, toss diced potatoes with the onion, celery, one teaspoon of salt and the eggs. While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch and salt in a saucepan. Stir in vinegar, milk and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat and stir in the butter. Refrigerate until cool, then stir in the mayonnaise. Gently stir the dressing into the bowl of potato salad until evenly coated. Chill several hours, or overnight, before serving.
HELPFUL TIPS:
Refrigerating overnight is best as it gives the flavors time to blend.

Ingredients  ♥

Lettuce, chopped bite size 
Eggs, hard boiled and chopped 
Turkey Bacon,  cooked and crumbled 
Tomatoes, chopped 
Green Onions, tops sliced thinly 
American cheese, light  grated 
Frozen Peas, thawed
    Dressing 
    1/2 cup Hellmann's  Light Mayo 
    1/2 cup light  Sour Cream 
    1 tablespoon sugar, to taste
    1 tablespoon parmesan cheese finely grated 
Instructions  ♥
  1. Clean and cut all ingredients
  2. Mix dressing and set aside
  3. In pint jars or a large bowl, layer ingredients as listed
  4. Top with dressing
  5. Garnish with extra ingredients if you like

now for the main course..my "skinny version" of the all american burger...♥













Ingredients ♥


  • 1 1/2 lbs ground turkey (lean meat)
  • 1 tablespoon whole grain mustard
  • 3 cloves garlic, minced
  • 1 egg
  • 2 tablespoons parsley, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Olive oil for brushing
  • 4 toasted wheat buns

Directions ♥

1. Preheat grill to medium.
2. In a large bowl add all of the ingredients. Mix well. Make 4 6 ounce patties. Brush each side with olive oil and season with salt and pepper. Place on hot grill. Cook for about 10-12 minutes flipping burgers once. Serve with toasted wheat bun.






and you can't forget dessert, here is something my mom used to make every fourth.. a patriotic flag cake with sparklers! fat free!!!!



  2 pt. strawberries



 1 pkg. (13.6 oz.) prepared fat-free pound cake, cut into 12 slices



1-1/3  cups blueberries, divided

 1 tub (12 oz.) COOL WHIP FREE Whipped Topping, thawed




SLICE 1 cup of the strawberries; set aside. Halve remaining strawberries; set aside.
LINE bottom of 13x9-inch baking dish with cake slices. Top with sliced strawberries and 1 cup of the blueberries. Spread whipped topping evenly over berries.
PLACE strawberry halves and remaining 1/3 cup blueberries on whipped topping to create a flag design. Refrigerate until ready to serve.


now for cocktails star-spangled margaritas! ♥



Strawberry
1 cup ice
1/2 cup fresh or frozen strawberries
3 ounces tequila
2 ounces lime juice
1 ounce Triple Sec or Cointreau
1/2 ounce simple syrup

Original
1 cup ice
3 ounces tequila
2 ounces lime juice
1 ounce Triple Sec or Cointreau

In a blender, blend together strawberry ingredients and place in freezer while blending all original ingredients. Pour half of the strawberry mixture into a glass and follow with half the original mix. Gently swirl with a straw or spoon. Top with frozen blueberries and a lime wedge.
Makes 2-3 frozen margaritas.
